From The Royal Kitchen Spinach Avocado Dip

We’ve had quite a few requests for this one, and it’s easy to understand why! Fresh, creamy and wonderfully moreish, this Spinach & Avocado Dip is one of those simple pleasures that feels both nourishing and indulgent. Full of vibrant green goodness, it’s healthy without trying too hard and unbeatable on freshly baked sourdough.


Ingredients:

  • 1 ripe avocado, peeled and diced
  • 120g washed baby spinach
  • 15ml red wine vinegar
  • 15g celery salt
  • 20ml honey
  • Sundried tomato pesto, to serve (optional)
  • Fresh sourdough baguette, to serve

 

Method:

  1. Ensure all fresh produce is washed and cleaned.
  2. Add the avocado, baby spinach, celery salt, honey and red wine vinegar to a blender. Blend until smooth and creamy.
  3. Scoop into a serving bowl and top with sundried tomato pesto, if desired. Serve with fresh sourdough baguette and enjoy.
